Denny Waxman – Macrobiotic Author, Counselor, & Teacher

With 40 years of experience, Denny Waxman is one of the nation’s leading macrobiotic counselors, speakers and teachers. Credited with changing the food narrative in the U.S. from diets dependent upon animal and dairy to healthy whole foods and plant-based alternatives, Denny is now training the next generation of macrobiotic teachers. He is author of several notable books including The Ultimate Guide to Eating for Longevity:The macrobiotic way to live a long, healthy, and happy life, which he co-wrote with his wife Susan. He is founder of Philadelphia’s first health store, Essene Market, and recipient of the Aveline Kushi International Award for his dedicated service to macrobiotics.

Susan Waxman – Macrobiotic Counselor, Cooking Instructor & Chef

Susan Waxman has dedicated her life to understanding the energetic nature of foods, cooking styles, and creating dynamic, healthful meal plans. This has allowed her to merge teaching and macrobiotic cooking that provides healthy, tasteful options for many clients looking to improve their health and perspective on life. Her expertise with ingredient selection, kitchen and pantry design, menu planning, and meal preparation are the foundation of her unique international macrobiotic cuisine.

Tom Monte – Macrobiotic Author, Counselor, & Teacher

Tom Monte has written more than thirty five books, including several bestsellers.  His latest book is Unexpected Recoveries: Seven Steps to Healing Body, Mind, and Soul When Serious Illness Strikes, which reports the common characteristics among people who have overcome life-threatening diseases with the use of complementary healing methods.

His works include, Recalled By Life and Living Well Naturally (both with Dr. Anthony Sattilaro) and Taking Woodstock (with Elliot Tiber), which was made into a feature film by famed director, Ang Lee. He also wrote World Medicine: The East West Guide to Healing Your Body, and The Complete Guide to Natural Healing, which provides natural healing methods for more than 120 illnesses and disorders.

Beti Minkin- Macrobiotic Cook, Field-Worker, & Owner of TOHUM® Organics.

Born and raised in Turkey, she spent most of her adult life in the USA. A student of Michio and Aveline Kushi, she applied Macrobiotics since 1980s in her everyday life as a mother, cook, practitioner, and later as a “Macrobiotic field-worker” back in her native country. Inspired by her teachers, she started the TOHUM® projects in traditional Turkish villages. Tohum means seed in Turkish. She partnered with local farmers to safeguard the disappearing heirloom seeds and artisanal products revered for their nutritional and healing properties. Over the years, she introduced organic certification to hundreds of traditional farmers.

Her latest project in a remote region of Turkey was awarded by IFOAM, an international organic agriculture body, for reviving the ancient wheat Emmer (Triticum dicoccum). She created the TOHUM® brand in 1995 for the sustainability of her projects, marketing highly nutritious products in the US. The brand still carries the unique Organic Golden Sesame Tahini, a traditional sesame butter made of heirloom golden sesame seeds.

Joe Waxman – Macrobiotic & Astrology Counselor 

Born and raised macrobiotic, I am the son of Denny Waxman and Judy Flohr. I have studied macrobiotics extensively throughout the country and in Europe formally and through first-hand lived experience. I have an active astrology counseling practice and I make videos on Youtube on many different subjects such as astrology, macrobiotics, spirituality and philosophy. This year I have also started to actively teach classes.

Gina Compello – Shiatsu Practitioner 

Hi! My name is Gina. I’ve been studying Macrobiotics since 2011.  I took the Advanced Macrobiotic Course with SHI in 2012 and then continued my education at the International School of Shiatsu to become a shiatsu practitioner.

After graduating from ISS, I began treating part time for a mentor  to continue studying in addition to starting my own practice in Philadelphia.

My focus is to use macrobiotics and bodywork to improve the lives of the people around me.

She will take us from golden sesame harvest to TOHUM® Tahini production to highlight the origin and quality of products we consume as healthy, nutritious, and healing. We will have the opportunity to examine aspects of biodiversity conservation and traditional, organic, sustainable agriculture practices.

SHI Macrobiotics is far more than a diet and lifestyle. Learn how orderly macrobiotic practice connects us with God, Nature or the Universe, our thoughts and feelings, each other, food itself and our planet. This is perhaps the most important benefit and reason for practicing macrobiotics.

Healing Your Body And Mind By Healing Your Microbiome (Tom Monte)

If there is a single aspect of your life that proves your body’s optimal function depends on a plant-based macrobiotic diet, it is your microbiome.

The microbiome — a vast population of microorganisms that exist primarily in your digestive tract — is a living intelligence that plays a central role in the health and vitality of your immune, digestive, and central nervous systems.  Your microbiome determines the clarity and function of your brain, your emotional stability, and much of your mental health.  It prevents and, in many cases,  can reverse depression, anxiety, and various forms of learning disabilities, including as ADHD.  The microbiome also has been shown to prevent serious illnesses, including common cancers, heart disease, and diabetes.

Recent research has shown that a healthy microbiome can prevent Covid-19, or reduce the strength of the illness should it take hold within your system.   

Your microbiome thrives on on a diet of whole grains, fresh vegetables, beans, sea vegetables, and fruit.  The macrobiotic diet can transform your microbiome within a month, usually within two or three weeks.

Awakening Your Potential: Living The Better You (Tom Monte)  

At the top of our life goals, at least for most of us, is the hope that we will fulfill our potential.  The question most of us ask is, how — how do we bring out what is most loving, gifted, wise, powerful, and beautiful within us?

The short answer is this: Your evolution depends on how you respond to challenges.  All species either evolve and bring forth potential abilities in the face of challenges, or they stagnate, decline, and eventually die out.

For humans, that means responding from the potential state when under stress.

When faced with a stressful situation, most of us react from deeply engrained, automatic behaviors — in short, habits that are physiological, emotional, and mental.  In the grip of our patterned responses, we tend to make bad decisions — and we make them consistently, which is why we experience the same problems over and over again.

In this talk, Tom Monte will reveal a simple, easy to follow, step-by-step approach to (first) seeing your patterned responses; (second), awakening the potential state within you; and (third) allowing that potential state to displace your automatic behaviors, especially when you are under stress.

The potential you does not respond to challenge with the same automatic patterns that your current consciousness dictates.  Therefore, the potential state creates an entirely new life, based on the new and evolved you that comes into being.

Turkish Food Culture w/ Springtime Recipes (Beti Minkin)

Presentation of fun Springtime recipes with background stories on Turkish food culture. Turkey is a bridge between East and West, the melting pot of many civilizations, the heartland of thousands of years of agriculture. Each region presents rich food traditions. During her field projects, Beti cooked with traditional women collecting recipes. She will share some of her experiences with us.
